  1. Soak barley and wheat over night. Take mutton with bone as bone adds more flavour,but more of fleshy pieces.
  2. Take whole spices and lightly roast it and grind it. Add mutton to the pressure cooker and add ginger garlic and green chilli paste.
  3. Add 3/4 of ground masala,salt and 1 glass water.
  4. Add bay leaves and then cook it till done. Almost for 4 to 5 whistles. When done keep aside. In the same cooker add the wheat +barley and add double amount of water,salt and oil and cover and cook for 4 whistles. When cooler coarsely pulse the cooked wheat in grinder.
  5. Add the grinded wheat in the cooker along with strained mutton stock. Shree the mutton pieces from bone and discard the bones. Add the mutton to harees and mix well.
  6. In another vessel heat olive oil and add the remaining grounded mix and when nice aroma comes add to the hadees and cook for 5 mins.
  7. Mutton harees is ready. Top it with fried onions and enjoy.
