The recipe does complete justice to the name and uses plenty of butter which balances out the heat from the spices and makes the final dal rich. Dal makhani is my third recipe of yours which I tried. I tried your palak paneer and dal tadka recipes and they came out SUPERB! I am definitely cooking dal makhani for my parents and siblings when I visit them in Jordan and will also bring a bag of urad dal since no way I will find it in Jordan.

Instructions to make Dal Makhani:
  1. Soak Urad dal and Red Kidney Beans overnight in 3-4 cups of water.
  2. Cook them in a pot, in same water with salt till it becomes soft. or Cook them in a pressure cooker for 3 whistles.
  3. Meanwhile in a non stick pan add butter and heat it up. Add cumin seeds when it crackles add Ginger Garlic paste. Saute them until it becomes fragrant.
  4. Add chopped onions, saute til they becomes translucent to light brown in color.
  5. Now, add chopped tomatoes, saute them til it becomes soft.
  6. Add chili powder, mix everything for a minute. - Add cooked Urad dal and Kidney beans to the pan(Drain water and keep it aside). Crush the dals with back of the ladle.
  7. Now, add milk and mix everything well. - Add salt to taste and cover the lid. Cook everything on medium flame for 15-20 minutes.
  8. To adjust the consistency you can add drained water we kept aside earlier.
  9. Add garam masala powder and let it simmer for another five minutes.
  10. Switch off the flame and season it with pinch of Kasoori methi.
  11. Top it up with melted butter and serve hot with Rice or Naan.

The more slow cooked dal makhani is the better it tastes. In most Indian restaurants specializing in authentic North Indian food, Dal Makhani is simmered overnight or for many hours. Basically you can call it slow cooking of the lentils. This slow cooking makes a world of difference to the consistency of the lentils.
