Qatayef can also be consumed plain, topped with clotted cream, or drizzled with sugar syrup.. The kenafeh is a dessert similar to the katayef, typical of the city of Nablus in the Middle East and widespread in Syria. Like the qatayef, it is prepared from unsalted cheese. This dessert is abundantly moistened with rose water syrup.

Steps to make Katayef:
  1. Mix all dry ingredients not the baking soda
  2. Place the warm water in the electric mixing bowl while mixing on high add the dry ingredients gradually to form thin pancake mix
  3. Let it rest for hour dissolve the baking soda in 1 tablespoon warm add to the pancakes mixture and keep stirring
  4. Using electric fry pan set at 350 degrees pour 1/4 cup dough and cook like pancake on one side only remove to towel until they cool try not to touch at all
  5. Fill each pancake with nut mixture or cheese file by pressing edges together to make a semicircle
  6. Brush each on both sides with oil place on a baking sheets and bake at 400 degrees in oven for 10 minutes
  7. Dip in cold syrup
  8. You could deep fried the pancake for few minutes then dip it in cold syrup

In Sicily, cannoli are popular pastries filled with ricotta and sprinkled with icing sugar. Each katayef shell is finished when the top is dry and the bottom is slightly browned.
