Instructions to make Khaja:
  1. Take 1 cup of all-purpose flour in a bowl. Add 2 tbsp ghee then mix and crumble. Now add 1/4 th cup of water and mix well and knead it's for 5 minutes (add the water according to requirement). Make them smooth and soft dough. Grease with the oil and rest it for 15 minutes.
  2. Sugar syrup - Take 1.5 cup sugar in a wok, add 1/4cup water and stir well. Keep stirring until the sugar gets dissolved. Boil on medium flame until the 1 string consistency. Add 1/4 tsp cardamom powder, 1tsp lemon juice. Now sugar syrup is ready.
  3. Now knead the dough again. Now are the big round ball, dust it and roll it thin. Remove the sides, dust again and roll tightly again dust and roll. Roll it till the end to help to get layers. Stick the end with the butter. Now cut it into 1 inch and press gently. Now you get the perfect layers.
  4. Deep fry all the khaja in medium hot oil. Fry on low flame. They float after 3 minutes. Now fry on low to medium flame till the golden and crisp and drain out all the khaja from the oil.
  5. Now put all the khaja into the warm sugar syrup and mix gently. Soak for 5 minutes, Absorbed well. Now khaja is ready to eat.
