Prepare Tomato khatta
Make ready 5-6 medium sized tomatoes roughly chopped

Get 1 sprig curry leaves
Prepare 1 tsp mustard seeds
Get 1 inch ginger roughly chopped
Prepare 3/4 tsp jaggery liquid
Get To taste Salt
Take 1 tsp oil
Take Aloo bhaja
Take 2 medium sized potatoes thinly sliced
Get 1 tsp Jeera seeds
Take 1/4 tsp Turmeric powder

Prepare As needed Oil for deep frying
Prepare As needed Bread crumbs

Instructions to make Bhata dalma Arancini:
Cook rice & let it cool.
Dalma- Drizzle oil to pan & add the veggies in the order of the ingredients list & sauté for 5mins.
In a pressure cooker add dal after oil is heated, sauté it for 5mins then add water,turmeric powder and salt as per taste & cover the lid until the water boils. Add in the potatoes, papaya, beans & pressure cook for 10mins. Then add the sautéed tomatoes and brinjal for 10mins/ until 2 whistles. Turn off flame & let it cool. For tempering, add the ingredients under the ingredients list and add dalma to it.
Dry roast dalma powder ingredients, grind it and add dalma & give it a mix.
Aloo bhaja- Take a pan add oil to it, jeera seeds and let it splutter. Add the potatoes, turmeric powder and salt as per taste and give it a mix. Cover and cook until the potatoes are done.
Tomato khatta- Take a pan, add oil to it and let it heat. Add mustard seeds to it and let it crackle. Add curry leaves and green chillies and ginger. After few mins, add the tomatoes with a bit of salt and cover to cook. After the tomatoes become mushy, add the jaggery & cook for 5-8mins on low flame. Then turn off the flame and let it cool.
For making arancini, take a bowl add two part rice and 1 part dalma. Mix these two and keep in fridge for 15-30mins.
Make a ball of the mixture and make a hole in it to add aloo bhaja and close the hole. Now dip the ball in corn flour slurry(1 part corn flour mixed with 4 parts water) then coat the ball with bread crumbs.Make sure you are doing double coats of layering. While you are doing this,heat oil for deep frying. Add the balls to fry untill it’s golden brown and then remove it. Repeat this step with as many balls you want to make. Lastly, fry 2 pieces of papads which we will need in garnishing.
