  4. Simmer gently for 4 hours. Let it cool slightly, then pull out the large solids and pour through a mesh strainer to remove the small solids.
  5. Cool completely and refrigerate overnight. As the stock cools, the fat will rise to the top and can be skimmed off before using.

It gives you the best tasting broth and it couldn't be easier to make! You'll just need a leftover chicken carcass (from a roast chicken), onion, carrots, celery and parsley. Then cover with water and let simmer away. Place all ingredients in a soup kettle or Dutch oven. Slowly bring to a boil; reduce heat until mixture is just at a simmer.
