Get Salad greens
Take 1 avocado
Prepare 2 red turnips
Make ready 1/2 carrot
Take 2 eggs
Take 1/3 can Spam
Get 2 Tbsp mayonnaise
Make ready 1 Tbsp *soy milk
Take 1 tsp *dried parsley
Prepare 1 tsp *vineger
Get *salt and pepper
Prepare 1 tsp olive oil
Make ready 1 tsp lemon juice
Instructions to make Cobb Salad with Homemade French dressing:
Make a hard boiled eggs and roughly chop into small pieces. Slice the carrots and red turnips, tear the greens into bite-size pieces and put on a plate.
Slice the spam into 1cm slices and cut each piece in half. Fry in a pan - without oil - until browned and crispy (important for best flavour!). Once cooked, let to cool for a while.
Remove the skin and chop the avocado into 2 cm cubes and put them into a bowl. Pour on 1 tsp olive oil, 1 tsp lemon juice and and season with salt and pepper. Gently mix all together well (be careful not to mash the avocado if soft).
Arrange the salad ingredients, mixed up if you wish, onto the plate with the greens. Try to be creative with the presentation! To make the dressing, mix the mayonnaise, soy milk, parsley, vinegar, salt and pepper then pour on the salad. Enjoy!
