  3. Heat oil in the pressure cooker and add cumin seeds. - When cumin start crackling add asafoetida,chopped green chilli, ginger and curry leaves.
  4. Now add the sprouts and stir to mix well. Now add salt, turmeric powder, coriander powder, red chilli powder and dry mango powder mix well.Add 1/4 cup of water.
  5. Close the cooker and pressure cook for 2 whistles on medium When the pressure cool down completely then open the cooker. Moth is ready.
  6. Arrange papdi in a plate.place boiled potato pieces over it.also spread sprouts prepared and pour 3 tsp of tamarind chutney over the papdis.
  7. Sprinkle chilli powder, chaat masala. add in thick whisked curd over papri.also sprinkle finely chopped onions,green chilli and tomatoes.once again spread moth,curd and tamarind chutney.
  8. Sprouts moth papadi chaat is ready. serve papdi chaat immediately.

Ensure moth beans are completely dried before refrigeration. Any kind of moisture may result into foul smell from moth beans. I also make moth bean sprouts to make matki usal and misal pav.
