  1. Heat oil in a pressure cooker, add mustard seeds and cumin seeds. Allow them to crackle.
  2. Add chopped garlic, fry till golden brown. Add dried chilies, fry.
  3. Add spinach and chopped onions, fry well on high heat for 2 – 3 mins.
  4. Add tomatoes, sauté for 1-2 mins.Reduce the heat to medium, add dal, turmeric and salt, continue to sauté for another 2-3 mins.
  5. Add 2 cups of water and ghee, pressure cook till done.
  6. Finally add lemon juice, simmer for another 2-3 minutes.For tempering, heat oil or ghee in small pan, add sliced garlic, fry till golden brown and release lovely aroma. pour this tempering over the dal.
