  1. For the batter, combine all the ingredients in a bowl with enough water to make a batter thick paste and it should be of pouring consistency as Image1. Keep aside.
  2. For the vadas, combine the potatoes, ginger paste, green chilli, thin poha, coriander, lemon juice and salt together in a bowl and mix well. Keep aside
  3. Heat a non-stick pan on a medium flame and when hot, add the mustard seeds, turmeric powder, curry leaves, urad dal, asafoetida and garlic and dry roast for about 2 minutes
  4. Add to the potato mixture and mix well
  5. Divide it into 6 equal portions and shape them into flat rounds and keep aside
  6. Heat a non-stick pan on a medium flame
  7. Dip the potato flat rounds in the batter and place them on the pan
  8. Cover and cook on a low flame for 3 to 4 minutes
  9. Turn upside down carefully (as it will be soft), cover again and cook for another 3 to 4 minutes
  10. Remove the lid and cook on both sides till they turn golden brown. Keep aside
  11. Serving method: Cut 1 burger bun into 2 pieces, apply 1 teaspoon of garlic chutney on the inner side of the bottom part and apply 1 teaspoon of green chutney on inner side of the upper part of the burger bun, as shown in Image2
  12. Place a vada on it and cover it with another piece of burger bun on top
  13. Repeat with the remaining vadas and batter to make 5 more vada pav
  14. Serve immediately
  15. Note: If you want, you can roast the bun with butter and then apply chutneys to it.

I make homemade Pav buns when I crave for homemade pav bhaji but a dozen small buns are definitely a lot for the two of us. In one such attempts, I decided to make Vada Pav at home as the husband is a huge fan (including all things fried). As I had the buns made already, I just had to get rest of the components ready - green chutney, tamarind chutney, garlic chutney and batata vada/aloo bonda. Great snack option for kids without sweating over hot oil; If we are going to eat sambar vada, rasam vada or thair (curd) vada, in which the fried crispiness is no longer necessary and is in fact soaked in liquid, why add additional calories? Personally, I get headaches if I eat oil-dripping vadas.
