  17. Prepare 1/2 tsp Sugar

The name 'luffa' is commonly used to refer to Luffa Acuangula, what we know as a ridge gourd in India and many parts of the world in its unripe form. I have a south Indian ridge gourd gravy for rice, but this one is totally different from that. This is ridge gourd gravy for chapati or rice but north Indian recipe. The recipe was shared by my friend Sangeeta, it is so very simple recipe wise.

Steps to make Paneer filled ridgeguard & flower pakoda in chilli tomato gravy:
  1. Peel the ridge gourd cut it into three pieces and make it empty from inside. Don't throw the inner part use it while making gravy. Now heat a pan add oil when it hot add onion 1 finely chopped let it brown then add tomato 1 finely chopped. Now add salt garam masala turmeric powder chat masala. Now add mashed paneer in it give a stir off the gas. Our filling is ready.
  2. Now fill the ridge gourd with this filling and grill it all. Meantime make it's gravy. Heat the pan add butter make it hot add cinnamon stick curry leaves, red chillies, garlic, onion, tomatoes, roughly chopped, 1 tbsp curd, mix it all, then add salt, garam masala, red chilli powder, no need to add turmeric powder. Add little water give a boil switch off the gas. Make it cool and grind it to make a puree again put puree in the pan add little sugar in it. Put filled ridge gourd in the gravy.
  3. For pakoda just mix all masala in a bowl with gram flour and add 1 tsp hot oil in it add water for pakoda consistency add ridgeguard flower in it. Heat the oil in a wok and fry these pakodas. Keep it on the side of gravy whenever you serve ridgeguard gravy.

Now add the chopped ridge gourd pieces along with turmeric powder, red chili powder, coriander powder & salt. Saute well and add water to it. Ridge gourd is known as peerkankai in Tamil, beerkaya in Telugu and tori or turai in Hindi. Dal is my comfort food all year round and this dal is no exception. Whenever I buy Ridge gourd, mostly I end up preparing this dal.
