Take 2 tbsp oil
Take 2 tbsp desi ghee
Malai stands for cream and Kofta is a fried dumpling of mashed potatoes, paneer (Indian. Malai Kofta is a classic North Indian dish originated from the Mughlai cuisine. Malai refers to the cream and koftas are deep fried paneer and vegetable dumplings in rich and creamy tomato gravy. Malai Kofta is a popular Indian vegetarian side dish made with kofta balls dunked in creamy tomato based gravy.
Instructions to make Malai kofta:
Kofta:- Mash potato, paneer and khoya in a bowl. Add salt, baking soda, ginger and maida. Mix it very well and make a smooth dough. Mix all the ingredients under section filling.
Divide the dough into 14 equal portion. Now flatan 1 portion on ur palm. Put some filling over the dough. And make a smooth ball by covering it from all the side. Make sure there is no crack on outer surface of the kofta.
Heat enough oil in a pan. When oil is medium hot thn put 3-4 kofta into it. Fry them till become light brown with some caution because these are very soft.
Grevy:- Heat oil and desi ghee in a pan. Saute all the whole spices then add chopped tomato. After 4-5 minutes add cashew and Mellon seeds after 4-5 minutes add all the dry spices. Now add water and give a good boil.
When cool down. Grind it into grinder. Now sieve it because we need smooth gravy for kofta. Pour it into the pan for further boiling. Boil it 2-3 minutes. Now add MALAI(not cream). U can adjust thickness of gravy by adding some milk into it. I added milk.
