Instructions to make Coconut Cream Pie:
  1. Bake 9" pie shell as directed.
  2. In top of double boiler combine sugar, flour and salt.
  3. Add milk, and egg yolks. Stir until smooth.
  4. Add 1 cup coconut.
  5. Cook over boiling water 5 minutes or until thick. Cover reduce heat cook 10 more minutes. Remove from heat
  6. Add vanilla and butter. Stir.
  7. Cool slightly, pour into baked pie shell.
  8. Make meringue by beating 3 egg whites until stiff, add 3 teaspoons sugar 1 teaspoon at a time and beat well after each teaspoon is added.
  9. Top filling with meringue and sprinkle with coconut.
  10. Bake 15 minutes at 350 degrees.
