The ingredients needed to make Rice kheer:
  1. Make ready 1/4 cup basmati rice
  2. Get 2 tsp ghee
  3. Take 3-4 green cardamom pods slightly crushed
  4. Get 1 litre whole milk
  5. Take 100 gm sugar
  6. Take 1 tbsp sliced almonds
  7. Take 1 tbsp sliced cashews
  8. Make ready 2 tbsp sliced pistachios

Chawal ki kheer, also known as rice payasam in South India, is a famous and most commonly prepared Indian sweet. Rice kheer (rice pudding) is an all-time fav of millions. The sweet, nutty, and creamy texture and the taste of well-cooked rice kheer can entice the five senses, toss you up in the sky with pure ecstasy. Steps to make Rice kheer:
  1. Rinse the rice well and soak it in water for 20-30 minutes. Drain the rice using a colander and set aside.
  2. Heat a heavy bottomed pan on a medium heat. Add 1 tsp ghee. Add the nuts like almond, cashew and pistachio. Fry them till golden brown. Remove them from the pan and set aside.
  3. In the same pan add remaining 1 tsp ghee. Then add the soaked and drained rice along with 3-4 crushed green cardamom pods.
  4. Toss the rice with the ghee and cardamom pods for 1-2 minutes, stirring constantly until aromat.
  5. Then add the milk and stir well. Set the heat to medium high and let the milk come to a boil. Stir at intervals so that the milk doesn't stick at the bottom of the pan.
  6. Once the milk has come to a boil, lower the heat to low and cook the rice for around 25 minutes or till completely done. Do stir at intervals.
  7. Now add the sugar, so also the nuts. Mix well and cook the kheer for 5 more minutes or until thickened. Switch off the flame.
  8. Serve the rice kheer warm or chilled, garnished with more nuts.

This kheer recipe is very easy to make and required very few ingredients. All of the ingredients will be available in your pantry. Kheer is not as thick as a Western-style rice pudding, and should be still be a bit fluid when cool. Often I have used substitutions in this recipe, depending on what I had on hand.
