  5. Salt and pepper the meat lightly and brown in oil on both sides. Take the browned meat out of the pan and top generously with the pesto. Preheat the oven to 180°C.

Poke a slice of garlic and a small sprig of rosemary into each one. Place the racks of lamb, with the bread crumbs facing up, on a rack in a roasting pan. Scatter the radishes in the pan, around and underneath the racks of lamb. Put oven rack in middle position and preheat. Pat seasoned breadcrumbs over rack (reserve any remaining breadcrumbs for another use), covering Dijon in an even layer.
