Get Filling :
Get 100 gm Shrimp
Take 3 tbsp Coriander leaves
Take 3 pcs Green chilli
Take 1 tbsp Soya sauce

Take 1 cup Plain flour
Get 1/4 cup Cornflour
Prepare 1 Egg

Instructions to make Crispy Shrimp Wonton:
Filling : wash, peel and devein the shrimp. For the wonton filling cut the shrimp until finely chopped and move them on to a bowl.
Add finely chop coriander leaves, green chilli, onion, soya sauce, chilli paste and salt to taste.
Mix well using a fork and set aside.
Dough : In a bowl add plain flour, cornflour. mix the dry ingredients together.
Make a small well in the center, break an egg on to a bowl and whisk it, add it to flour mixture.
In a small bowl, add water to dissolve salt. Add it to the flour mixture and mix well.
Add lukewarm water at a time(½cup in total) and knead until you form an elastic dough.
Cover with a damp to towel and rest for 10-15 mins.
Dust the surface with flour, knead the dough and cut into 2 balls.
Take one portion and roll the dough to flat and very thin sheets(the thinner, the better!)
Cut the sheets into square shapes (approximately 3.5inch) and set aside.
Take one sheet and add shrimp filling to the center. Brush egg wash on the outskirt of half of the wrapper sheet. Close the edge and twist the wrapper to the desired shape of wonton. Be sure to seal the wrapper well, the tighter you can wrap it, the better!
Heat oil in a pan over medium heat. Deep fry 4 wontons at a time, fry each side until golden brown.
Remove and drain excess oil on paper towel. Serve fried crispy Shrimp wontons with your preferred sauce. Enjoy!
