Malai stands for cream and Kofta is a fried dumpling of mashed potatoes, paneer (Indian. Malai Kofta is a classic North Indian dish originated from the Mughlai cuisine. Malai refers to the cream and koftas are deep fried paneer and vegetable dumplings in rich and creamy tomato gravy. Malai Kofta is a popular Indian vegetarian side dish made with kofta balls dunked in creamy tomato based gravy.

Steps to make Malai Kofta:
  1. Take a bowl, add grated paneer (take out little bit from it for garnishing), granted potato, salt, garam masala powder and maida into it and mix it well make a dough of it.
  2. Cut small peices out of it and and and flaten it with your palm and stuff it with some finely chopped almonds, cashew nuts, pistachios and raisins and make ball of it.
  3. Meanwhile, heat some oil in a pan and drop stuffed balls into it, one-by-one and deep fry it and try to fry it with spoon rather than with some spatula. (Don't fry a lot of balls in one batch, try tofry 4-5 balls at once.)
  4. Put another pan on the flame and put some oil into it and fry some almonds and cashew nuts in it.
  5. Then add onion into it and saute it well and add green chillies, ginger-garlic paste and tomato into it and let it cook till tomato get mushy.
  6. Switch off the flame and allow it to cool for some time and grind in into fine paste without using water.
  7. Again put a pan on the flame,add some oil and heat it. Then add pepper corn, elaichi, cinnamon stick and bay leaf into it and fry it well.
  8. Into that oil add some turmeric powder, coriander powder, red chilli powder, cumin powder into it and let it cook and then quickly add the grinder mixture into it and allow it cook for some time till it leaves the sides of the pan.
  9. Then add water as per your requirement and add salt, kasuri methi into it and let it boil properly.
  10. Then add some fresh cream and garam masala powder into it and mix it well
  11. Then drop fried balls into it and cook it for some 4-5 minutes.
  12. Switch off the flame. Serve it in some dish and garnish it with some grated paneer, chopped almonds, cashew nuts, pistachios and raisins.
