  1. Prepare 4 bitter guards
  2. Get 1-2 tsp salt
  3. Get For stuffing n gravy
  4. Prepare To taste salt
  5. Get 2 medium size onions sliced
  6. Get 2 tsp red chilli powder
  7. Prepare 1 tsp turmeric powder
  8. Take 1 tsp Coriander powder
  9. Take 1 tsp mustard seeds

  13. Take 3 tsp gram flour
  14. Prepare 1 1/2 tsp ginger garlic paste

  17. Prepare 2-3 cups water

Steps to make Bharva karela gravy:
  1. Peel the bitter guards, apply salt n rest them for 5 to 10 minutes n wash away. slit them n deseed them
  2. Now heat oil n add cumin seeds, carrom seeds, mustard seeds n black sesame seeds. Let them crackle n add sliced onions. Saute them well
  3. Add ginger garlic paste and green chilli chopped. Add tomatoes n let everything cook well. Add all the powdered masalas.
  4. When oil separates from masalas add gram flour to it. Mix well with the masalas n cook well until it's combined like a dough.
  5. Now take some of the mixture n let it cool down. N add water in the rest of the mixture.
  6. Adding more water adjust the consistency of the gravy. Now fill the bitter guards with the mixture.
  7. Now add 1 or 2 tsp oil in frying pan n saute the bitter guards well by flipping them.
  8. Cut the bitter guards from middle n serve with gravy. Serve hot. Garnish with Coriander leaves.
