Steps to make Besan khakhra:
  1. For the making of the dough: Take a bowl to add maida, salt, oil and combine well together then add water and knead a soft dough, leave it to rest for 5-10mins by covering it with lid or kitchen towel.
  2. Till our dough rest let's prepare the stuffing. Take a mixing bowl to add gram flour(besan), salt, red chilli powder, hing, lime salt, ajwain, saunf, garam masala, turmeric powder, crushed dry mint leaves (pudina) and mix all well. Now dig a well between the flour add oil and combine all the ingredients well and keep aside.
  3. Now all preparations are done let's start making khakhra out of it. Take small portions of dough and roll out small thick puri and add 1½ tsp of stuffing and pack it tightly and make a ball back and roll it thin khakhra with smooth hands.
  4. Then cook on pre-heated Tawa like we cook paratha by pouring little oil on it. Cook from both sides till it gets crispy and light golden brown colour.
  5. Serve with Tea or without tea or with curd.
  6. Tips: while rolling don't roll with pressure else stuffing will come out. And while cooking keep flame on low-medium.

This is the most basic difference between a khakhra and fafda. Traditionally, khakhra is made using wheat flour. Fafda is made using besan or gram flour. The use of different types of flour ensures that the texture and taste vary too. You will also find the use of matki, a type of bean (also called Turkish bean) in khakhra.
