  1. Make ready 250 gm Bitter Gourd
  2. Take 8-10 Tsp Poppy Seed Paste
  3. Get 2 Tsp Turmeric Powder
  4. Make ready 4 Tsp Gram Flour
  5. Make ready to taste Salt
  6. Make ready 1 Tsp Sugar

Karela also referred to as bitter gourd, bitter melon or bitter squash is the most disliked vegetable. Back in college, we did a survey of the least liked vegetable and karela made it to the top followed by few eggplant haters, petha came in next (butternut squash) and bhindi (okra) being the last. If the karela is thick, it may require a bit longer, so keep checking. Meanwhile, heat oil in a pan over medium flame and add the onions in it.

Steps to make Bharwa karela:
  1. Cut the bitter gourd horizontally into halves.
  2. Clean the seeds. Sprinkle salt and 1 tsp Turmeric powder.
  3. Put pan in a oven. Put the bitter gourd pieces. Cover with a lid and cook in low flame.
  4. Cook till bitter gourd cubes softens a bit. Transfer them to a plate.
  5. Take the poppy seed paste. Add pinch of salt and 1 tsp sugar and pinch of turmeric powder. (Addition of sugar makes the recipe of karela very tasty). Whisk everything.
  6. Take gram flour in a bowl. Make a smooth paste by adding water.
  7. Now take the bitter gourd pieces. Stuff each of them with poppy seed paste. Seal with gram flour paste.
  8. Drizzle mustard oil in pan. It's aroma will make the preparation more attractive.
  9. Place the karelas carefully.
  10. Fry them while flipping in between. This step consumes time, as stuffed karela takes time to fry.
  11. Transfer to a plate/bowl and serve with rice, dal combo.

Stir fry until the onions turn golden brown. Stuffed with tangy achar and dry masalas, this makes a great accompaniment to Dal, Rice and Roti. The delicious spices takes away the bitterness from the bitter gourds and make it a mouth watering spicy dish.
