Soft food mashed = chokha, as in aloo-baingan ka chokha or sattu chokha. I made this yesterday and it is delicious! I even had it for breakfast this morning…even better! I added moringa leaves (because I had to use them up).

  1. Peel the papaya and cut it lengthwise.
  2. Boil it in a pressure cooker with little water and salt.
  3. Drain water and use it for cooking dal or curry as the water is full of nutrition.
  4. Mash the boiled papaya. - Put 2 tbsp oil in a wok. When heated, put in half a tsp mustard seeds and 10 or 12 curry leaves.
  5. When the aroma starts coming up, put the chopped chillies and fry for half a minute. Then put the chopped onions and fry till transculent. Then add the tomato cubes, taking care not to mash them too much. Fry them for one minute.
  6. After that, add the mashed papaya and keep stirring it. Next put salt to taste, a pinch of turmeric powder and break a green chilli for flavour.
  7. When everything is assimilated and oil starts coming out from sides, put a few more curry leaves, stir and let it rest for 5 minutes.
  8. Garnish with chopped Coriander leaves.Eat it with hot rice or roti.

Serving suggestions: Good to go as side dish with any roti or paratha or south Indian rice dishes. A small piece of green papaya added to the meat will make it tender and the meat will get cooked very fast. So it can be used as a meat tenderiser. Take out Baigan Bharta in a bowl, garnish with green coriander. Serve hot Baigan Bharta with parantha, chapati or naan.
