Get 6 tbsp milk podwer
Take 2 tbsp water
Make ready 2-3 cup milk
Get 2 cup maida/All -purpose flour

Prepare 7 almonds sliced
Prepare 5 tbsp desi ghee
Prepare 1 cup ice cubes

Prepare 2 tbsp ghee
Take pinch saffron threads
Make ready 10-15 pistachios (chopped)
Make ready 1/4 tbsp cardamom powder
Steps to make Mini Ghewar:
First of all prepare the rabri using just two ingredients mix the milk powder in 2 cup milk and let it reduce. Add the elaichi powder. When it gets to the smearing consistency. keep aside and let it cool down.
Now in a mixing bowl add ice ghee and mix until it turns white and buttery soft then get rid of the ice cubes and add the flour(maida) to it and mix properly.
Add rest of the milk to this mixture and fold in properly.. now add water and mix the consistency should be pour-able but not too thick it should be more on watery side but not too watery or the ghewar will split.
Now, fill half of a small saucepan with oil + ghee mix and get it hot, now be very careful about this step the ghewar batter will make the oil go up so don't fill the container comletely now pour the mixture in middle of the container and let bubbles settle and pour again using a knife make hole in between after every pour,repeat this process 4-5 times. Let it turn golden. Then take it out on a tissue to get rid of excess oil. it should not stick to the bottom.
Make one string sugar syrup using 2cup sugar and 1.5 cup water.
Now blanch the almonds and pistachios and cut them.
Assembling these mini ghewars was fun, pour the sugar syrup on these babies and then smear that yummy rabri over it top up with the almonds and pistachios and sprinkle the saffron strands. enjoy!
