The ingredients needed to make Chana Masala:
  1. Make ready 1 cup Chana/Chole/Chickpeas (Soaked and boiled)
  2. Take 2 Onions, finely chopped
  3. Make ready 2 Garlic cloves, minced

  5. Prepare 2 tsp Ginger Garlic paste
  6. Make ready Fresh coriander leaves, chopped

  9. Take 1 tsp Turmeric powder
  10. Prepare 1 tsp Red chilli powder
  11. Take 1 tsp Kitchen king
  12. Take 1 tbsp Crushed Kasoori methi
  13. Take 1/2 tsp Hing/Asafoetida
  14. Prepare 1-1 1/2 tsp Anaardana powder
  15. Get 1 tbsp Coriander powder
  16. Get 1/2 tsp Garam Masala
  17. Get 1-2 tsp Mdh Chana Masala
  18. Make ready Water as required
  19. Get 2-3 tbsp Oil
  20. Get 1-2 bay leaves
Steps to make Chana Masala:
  1. Heat oil in wok or cooking pot. Add cumin seeds, hing. Then add chopped onion, bay leaves and garlic, sauté them till they turn translucent.
  2. Then add chopped tomatoes, grated ginger and some salt. Stir well. Let it cook for atleast 2 mins.
  3. Add some water and start adding all the masalas - turmeric, coriander, garam, anaardana, red chilli, kitchen king, Chana masala. Mix well.
  4. Add boiled Chana and salt (if required). Then add 2-3 cups of water or as per your requirement and mix well. Let it cook for 4-5 mins on medium-low flame.
  5. Cover the pot with a lid on medium low heat for 8-10 minutes. After 10-12 minutes, add crushed Kasoori methi and mix well. Garnish with chopped coriander leaves and onions.
  6. To prepare mint raita - you can add crushed mint leaves to the curd. But I have used mint powder, black pepper and salt.
  7. Serve hot with Chapati, salad and mint raita.
