Spinach (Palak) and Chole (Chickpeas) are a super healthy combination. Chickpeas are rich in proteins and Chickpeas are first boiled and then cooked in a spinach gravy with spices. I have used onion and tomatoes in the Now add the chopped onions and cook till they are light golden brown in color.   1. Boil chole and slice onion, tomatoes roughly.

  4. Take 3 tbspn oil in pan. Add cumin, hing, bay leaves and star anise. Now add onion tomatoes paste in it. Saute for some time.
  5. Now add turmeric, red chilli powder, coriander-cumin powder and salt.
  6. Cook until oil separated. add garam masala and chole masala mix it well.
  7. Now add boiled chole in gravy. Add water as per your requirement and cook it. Garnish with coriander leaves. Enjoy with bhature aur jeera rice.
