The ingredients needed to make Chole Bhature:
Take For boiling chole
Prepare 1 black cardamom
Get 7-8 peppercorns
Make ready 1 Bayleaf
Prepare 2 cardamoms
Prepare 1 inch cinnamon
Get 4-5 cloves
Prepare 4-6 dried gooseberries
Prepare 1/2 tsp tea leaves
Prepare 250 grams soaked kabuli chana
Make ready For gravy
Take 3 chopped tomatoes’ purée
Take 2 chopped onions
Make ready 1 tsp carom
Make ready 5 tbsp oil
Take 1 tsp chili powder
Make ready 1 tsp turmeric powder
Make ready 1 tsp cumin powder
Prepare 1 tsp coriander powder
Prepare 1/2 tsp chopped garlic
Make ready 1/2 tsp chopped ginger
Get 1 tbsp chole masala
Get 1/4 tbsp fenugreek powder
Take 1 tbsp dry mango powder
Get to taste Salt
Get For bhature
Make ready 2 cups refined flour
Get 1 cup semolina
Make ready 1/4 tsp baking powder
Get 1/4 tsp baking soda
Prepare 1/2 tsp salt
Prepare 1/4 tsp sugar
Make ready 2 tbsp curd
Get Water as required
Instructions to make Chole Bhature:
Take a muslin cloth and put all the ingredients for boiling chole
Now add the bag of spices into the cooker, add chana to it and add twice the water as much as chana and finally add salt to taste
Pressure cook it till 6-7 whistles
Until the chole cooks, make the bhature dough for that take 2 cups refined flour, add 1 cup semolina, add 1/4 tsp baking powder, add 1/4 baking soda, add salt to taste, add a pinch of sugar finally add 2 big tbsp curd knead them well by adding water as required. Cover it and let it rest for 2 hours
Now let’s make the gravy. For that take a pan put on the flame. Add 5 tbsp oil,let it heat up then add 1 tbsp carom after it add 1/2 tbsp chopped ginger, add 1/2 tbsp chopped garlic let it sauté and add 2 chopped onions let it sauté till light brown.
Now we will add the spices to the gravy,add 1 tsp chili powder, 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp coriander powder.Let it simmer for 2 minutes
Then add 3 tomatoes’ purée to it. Add 1 tbsp chole masala, 1/4 tbsp fenugreek powder, 1/2 tbsp dry mango powder and salt to taste.Let it cook for 2 minutes
When the chole are cook add them to the gravy. Now take the boiled chole water add it to the gravy after adding chana. Let it simmer for 15 minutes, add the chole water as required
Now it is bhature so take a kadai with oil. Make balls of the dough roll it into oval or circle shape. Add them to the kadai continuous let the oil go upon the bhature let it be filled up.
Finally serve it with salad and fried chilies
