The ingredients needed to make Chole Bhature:
Get For Chole
Prepare 1 cup soaked chickpeas (chole soaked for 4-5 hours)
Get Salt as per taste
Take 2 tomatoes for tomato puree
Take 1 tbsp chole masala
Prepare 2 tsp sugar
Get 1 tbsp oil
Take 1 small cinnamon stick
Prepare 1/4 th tsp cumin seeds
Prepare 1 tsp chilli powder
Prepare Pinch asaefoetida (hing)
Prepare 1/2 tsp coriander powder
Prepare Some chopped coriander
Get For Bhature
Prepare 1 cup Maida (plain flour)
Make ready 1 tbsp rava (semolina)
Prepare Salt as per taste
Take 1 tsp sugar
Get 2 tbsp curd
Prepare 1/2 tsp baking powder
Take 1/4 th tsp baking soda
Make ready 2 tsp oil
Get Oil for deep frying
Steps to make Chole Bhature:
For chole, In a pressure cooker heat oil then add cinnamon stick, cumin seeds, hing, chilli powder and tomato puree and saute for a minute. then add soaked chole, 2 cups water and salt. Mix well and Pressure cook for 5 whistles. Allow the pressure to release the steam on it's own.
Then open the lid, add sugar and chole masala and mash some chole and cook on medium flame till the water is absorbed. Finally, garnish with chopped coriander.
For bhature, In a bowl take maida, add rava, salt, sugar, baking powder, baking soda and oil. Mix all the ingredients well using both hands. Make sure the oil is mixed with the flour. Add curd and knead the dough for 5 minutes properly. Then grease the dough with oil and cover and keep aside for 1 hour.
Knead the dough for minute and divide into equal balls. Take a portion and roll using maida for dusting. Keep it a little thick so that it puffs up. Now heat oil in a pan and add bhatura when the oil is very hot. Tap with a spoon if it doesn't puff up. Fry till golden from both sides. Finally, serve hot with chole.
