Prepare For Bhature
Take Refined flour (maida) - 2 and 1/2 cups
Get 1/2 cup Yogurt
Get 1/2 tsp Baking powder
Make ready 1 tsp Salt
Make ready 2 tbsp Oil
Make ready 2 tsp Sugar
Take For Chole
Make ready 2 cups Chickpeas
Prepare 5-6 Green Cardamom pods
Take 2 Cinnamon sticks
Take to taste Salt
Take 1 cup chopped Onions
Take 1 cup pureed Tomatoes
Get 3-4 Cloves
Get 2 tsp Ginger and Garlic paste
Get 1 tsp Red chilli powder
Take 3 tsp Chole masala
Make ready 5 cups Water
Prepare 2 tbsp Ghee
Take 1/2 tsp Garam masala
Take 2 tsp chopped Coriander leaves
Steps to make Chole Bhature:
For bhature take flour, baking powder, sugar, oil and salt in a bowl.
Add yoghurt and mix well.
Add a cup of warm water and mix gradually to make a soft dough.
Cover the dough with a wet cloth and keep it aside for 2 hours.
For chole soak the chickpeas overnight in enough water to cover them.
In a pressure cooker boil the soaked chickpeas with water and some salt.
Pressure cook at high flame till you get 1-2 whistles and then lower the flame to medium and let the chickpeas cook for another 10-12 minutes.
In a wok, heat 2 tsp of oil and then add whole garam masalas.
Add onions and fry till the raw smell goes away and they are light golden brown in colour.
Add ginger-garlic paste and cook for 3-4 minutes till the smell of ginger-garlic goes away.
Add the garam masala, red chilli powder and mix for 1-2 minutes.
Now add the tomato puree, stir and let it cook for 12-15 minutes on medium-low flame.
Add the boiled chickpeas, chole masala and salt and stir till all the chickpeas are coated with the spices.
Add water and chat masala, cover the pan and let it simmer at medium flame for 20 minutes.
The gravy will thicken after 20 minutes so add water accordingly.
Sprinkle somekasuri methi and garnish with chopped coriander leaves, onion rings and chopped ginger.
Now divide bhatura dough into equal portions and them into balls.
Roll out like chapati with rolling pin.
Heat oil in a kadai and deep fry the bhaturas on high heat till light brown on both sides.
Drain on absorbent paper.
Serve hot chole bhature with onion rings, lemon slices and some pickles.
