  2. Prepare 1 cup kabuli chane (soaked overnight)

  4. Make ready 2 tomato paste
  5. Take 4 tbsp mustard oil
  6. Prepare 1 tbsp ginger garlic paste
  7. Get 2 green chillies
  8. Take as required Spices for chole-

  11. Get 1 tbsp coriander powder
  12. Take 1/2 tbsp turmeric powder
  13. Make ready 1/2 tbsp redchilly powder
  14. Take 1 tbsp aamchoor powder
  15. Get 1 tbsp tea leaves
  16. Prepare 1 tbsp baking powder
  17. Make ready 1 tbsp roasted kasoori methi
  18. Prepare For tempering-
  19. Take 1 tbsp ghee
  20. Take 1 tbsp hing
  21. Prepare 2 sliced green chillies
  22. Get 1 inch thinly sliced ginger
  23. Take For Bhature-
  24. Make ready 250 gms refined flour
  25. Get 1/2 cup curd
  26. Make ready 1 tbsp baking powder
  27. Take 1/4 tbsp baking soda
  28. Take 4 tbsp oil
  29. Prepare as required Oil for frying
Steps to make Punjabi Chole Bhature:
  1. Take a cooker add oil and heat it now add onion paste and cook it till golden colour at low flame.
  2. Now add tomatoes paste and cook it also for next 5 minutes at low flame, now add salt and then again cook for 2 minutes.Now add all the spices and mix it gently add little water in it and cook.Now add chole in it and mix all the masala with it properly.
  3. Now in a pan add 2 cups of water and boil it.Add tea leaves in it and boil it for 2 minutes and strain this water in the chole and mix it well and also add baking powder in to the chole and mix well.
  4. Now put the lid of the cooker and cook it for another 20 minutes or till 6 whistles at medium flame.
  5. After 20 minutes open the cooker add roasted kasoori methi and in one small laddle add ghee and heat it and add hing,green chilli and ginger and cook it for a while and add this tempering in to the chole.Our Punjabi Chole is ready to serve.
  6. Now for bhature,take a parat add flour now add baking powder,baking soda,curd and oil in it and mix it well now make a smooth dough with the help of warm water and keep it aside for 30 minutes.
  7. Now take a wok and heat the oil at high flame. Now for bhature making I used thick plastic sheet apply oil on the sheet and take a ball from the dough and keep it on the sheet and cover the ball with the other side of the sheet and flat it with the help of the rolling pin and gently drop it in to the oil at high temperature and cook it till it get fluffy. Our bhatura is ready to serve with chole.
