  1. Get 600 ml boiled water
  2. Get 1 vegetable stock cube
  3. Make ready 15 g dried porcini mushrooms
  4. Take 35 g ginger root
  5. Make ready 3 spring onions
  6. Make ready 2 tsp miso paste
  7. Take 2 tsp mirin
  8. Make ready 1 tbsp soy sauce

  13. Prepare 150 g straight to wok udon noodles

  5. Quarter the chestnut mushrooms and add them to the stock.
  6. Roughly chop the pak choi leaves and finely slice the stalks. Add these to the stock and cook on high for 30mins (checking and stiring after 15mins)
  7. Once ready, remove the lid and add the straight to wok noodles. Stir and leave to cook for 5mins.

Serve the broth in deep bowls seasoned with fish sauce (if using) and soy sauce, sprinkle with the herbs, cress, spring onion and chilli, then serve with wedges of lime.
