The maize and beans are mixed together in a sufuria or pot, water is then added and the mixture boiled until the food is cooked and ready to eat. Githeri is the staple food of the Gikuyu, Meru and Embu people in the Central Province of Kenya.

Similar to America Indian succotash; the cooked maize shoulb be whole, the legumes should not be overcooked and should remain as individual grains. The final dish should not be wet enough to stick to the hands. Pure is the Swahili word githeri, the name given to a Kenyan meal made using maize and beans. Githeri is not a Swahili word though but it is the most commonly used name for the meal which has its origin in Central Kenya.
Pure and makande are the Swahili words for the meal whereas "succotash" is the English equivalent.
