Take 1 kg Cooked Rice
Take Sossi Soya 1pkt or any other Soya Chunks pkt
Take cubes Potatoes cut into Medium
Make ready 1 bunch Coriander chopped
Prepare Green Chillies to taste (Optional) chopped
Make ready Cloves peeled Garlic 5-6pcs
Prepare Onions 1-2 pcs depending on size, diced
Prepare Tomatoes 5pcs medium sized grated
Prepare Green Bell Pepper 1 large pc julienned
Prepare 3 tablespoons Olive oil or any other vegetable oil
Make ready Salt to taste (Preferably Sea salt)
Get Diya's Special Curry Powder Mix (or any other Curry powder)
Make ready 1 jug of clean water for cooking
Instructions to make Boiled Rice With Veggies Curry:
Add oil into a medium sized pan, let it heat up then add the onions and let them brown into a nice golden colour.
Add the Soya Chunks, and stir until well integrated with oil stirring constantly so it doesn't burn. Do this until it has a nice brown colour.
Add the cubed potatoes and stir until mixed properly.
Crush Garlic, coriander and Green chillies if using when it forms a paste add a little water n pour into the pan and stir well. Cover for a while then open and stir
Add the grated tomatoes, stir until well mixed then cover for a few minutes 2-3 mins is enough. Open the lid add the green bell pepper and Curry Powder and stir until well mixed. Cover for another few minutes.
Open, stir and add water gradually until you reach your desired stew size. But not to much water.
Leave it to boil stirring occasionally until the potatoes are tender and the curry is thick.
Serve with Cooked boiled rice.
