The ingredients needed to make Gooseberry and ginger jam:
  1. Prepare 1 lb gooseberries topped and tailed
  2. Prepare 1 lb granulated white sugar
  3. Make ready 1 piece of fresh ginger ( about 1") peeled and grated
  4. Take 200 ml or 7 fluid oz water
  5. Get 1 this recipe makes about 2lb of jam

Gooseberry jam is one of those old fashioned pleasures that your grandma raves about, but it's hard to lay hands on it these days. Since gooseberries are making their way back into farmers markets across the country, it's easy enough to make your own homemade gooseberry jam. Fresh gooseberries are cooked in a spiced sugar syrup with crystallised ginger, cinnamon, cloves and allspice. It's best not to use over ripe gooseberries.

Instructions to make Gooseberry and ginger jam:
  1. Stew fruit and ginger in a heavy pan in water untill tender and broken.
  2. Add sugar, dissolve - then boil up untill it will set. Remove any scum as the jam boils.
  3. Remove from heat as soon as it will set when tested. To test for setting:- place a little jam on a cool plate, let it cool. If it wrinkles when moved slightly it is ready to set.
  4. To sterilise jars and lids either place in a warm oven for 5 mins or poor boiling water into them (place a metal spoon in each jar this will prevent the jar from cracking)
  5. Fill the jars almost full, place waxed paper on the jam, put on lids to seal and label.

They need to be firm to prevent them falling apart in the hot syrup. Serve over ice cream or use as a filling for cakes or pavlova. This is a jam recipe was given to me by my mother in law. She made it every year and would send us a pint because we could not get gooseberries where I'd never tasted a gooseberry before and wasn't sure what to expect. My jam turned out great perfect sweet/tart combo and such a beautiful color.
