Boil,peel and mashed potatoes.Heat oil in a wok and fry finely chopped onion.Add chopped capsicum.Stir fry and add mashed potato.Add salt and sugar to taste.Also add red chilli powder,garam masala, chopped green chillies,coriander and grated carrot.Toss and mix all and fry till well browned.Grind mint and coriander with little salt,1 tsp roasted cumin and gramflour and lemon juice. Sprinkle little water and make a smooth paste.A pinch of sugar may be added.
Divide the potato mix into small balls.Butter 4 bread slices.Smear green chutney on one bread slice.On another slice place capsicum ring and a ball of potato mix.The buttered side of bread should face outward.Grate cheese and sprinkle on the potato.Press the chutney side of other bread on the cheesy potato.Toast in a griller for 3 minutes till golden brown and sprinkle grated cheese on grilled sandwiches.Cut diagonally.Serve crispy hot grilled sandwich with tomato sauce and green chutney.
