  5. Add mixture on top of the base of biscuit crumbs and butter. Bake for 45-55 minutes.
  6. Run sharp knife along the sides and let it cool before taking out of the mould. Cool for a couple of hours in the fridge before serving

Remove from heat, strain the ginger and discard, and cool. To serve remove the cheesecake and white chocolate from the fridge. Unmould the cheescake by running a knife around the edge and place onto a serving plate. Using a sharp knife, chop the chocolate into thin batons and scatter over the top of the cheesecake.
