1. Line a 8 1/2 x 4 1/2 metal loaf pan with foil, folding all edges outside of the pan. Grease with baking spray and flour. Preheat your oven to 350 degrees F.
2. In a small bowl, combine the following: 1/4 cup sugar, walnuts and cinnamon. In a medium bowl, combine the following: flour, baking powder, baking soda and salt. Make sure the dry ingredients are mixed well.
3. In a large mixing bowl, use a mixer on low speed to cream the butter and 3/4 cup sugar until completely blended. Increase the speed of the mixer and beat until light and fluffy. Reduce speed back to low and add egg and vanilla.
4. Alternately add dry ingredients and sour cream, beginning and ending with flour mixture. Scrape the bowl occasionally to incorporate all ingredients until smooth.
5. Pour 1/3 of the batter into the pan and sprinkle with half the streusel. Top with another third of the batter and half the remaining streusel and continue one more level, ending with streusel at the top.
6. Bake in the center of the oven for approximately an hour, or until an inserted toothpick comes out clean. Take the cake out of the even and let it cool in the pan for about 15 minutes. It should come out cleanly when you pull out the foil.
7. Slice and enjoy with coffee or even milk tea.
