The current Hiroshima Okonomiyaki with meat, egg, and noodles is a version that has evolved throughout the years. Hiroshima style okonomiyaki, is unique to the prefecture of Hiroshima where the pancake ingredients are cooked in separate layers.

  10. Take 2 tablespoons ‘Tenkasu’ *also called ‘Agedama’
  11. Take *Note: ‘Tenkasu’ is Deep-fried Tempura Batter Chips and it can be impossible to find for many of us. The best substitutes are ‘Fried Shallots’, ‘Shrimp Crackers’ or Indian ‘Boondi’
  12. Prepare 50 g thinly sliced Pork
  13. Get 1 serving (100g) Yakisoba Noodles OR Stir-fry Noodles
  14. Make ready Salt & Finely Ground Pepper
  15. Make ready 1 Egg
  16. Take Okonomiyaki Sauce
  17. Take 1 Spring Onion *finely chopped
  18. Get Aonori (Finely Shredded Green Seaweed) *optional
  19. Take Benishoga (Red Pickled Ginger) OR Pink Pickled Ginger *optional

Unlike the more mainstream version of okonomiyaki, where the batter is mixed with the cabbage and other ingredients, each ingredient in Hiroshima okonomiyaki is stacked on top of each other and covered with a layer of yakisoba noodles, egg, tasty sauces, and toppings. Hiroshima Style Okonomiyaki is a layered pancake with the batter making up only a thin layer at the bottom. Osaka Style Okonomiyaki is more floury and pancake-like with the ingredients mixed into the batter. Both are equally tasty and so it is a matter of preference.

Steps to make Hiroshima-Style Okonomiyaki:
  1. Make the crepe batter by mixing Flour and Water, and set aside. Prepare the vegetables.
  2. Heat a large frying pan over high heat, apply a small amount of Oil, and reduce the heat to medium low. *Note: If you use a not-stick frying pan, simply heat over medium low heat and apply a small amount of Oil.
  3. Spread the batter to create a crepe about 18cm in diameter. (The larger the crepe is, the harder to flip over.) *You must save 2 tablespoons batter.
  4. Sprinkle with the crumbled Katsuobushi (Bonito Flakes) (*optional). Place thinly sliced Cabbage, Bean Sprouts and ‘Tenkasu’ (OR the substitute), drizzle the saved batter over, and cover with Pork slices. Sprinkle with Salt & Pepper.
  5. When the crepe is nicely browned, carefully flip the whole thing over using 2 turners so that the Pork slices are now touching the frying pan. FIGHT against the temptation that you want to press it down, and let it cook slowly for 4 to 5 minutes. (Slow steam-cooking makes the Cabbage sweet.) Then you may press it down.
  6. *Tips: Some vegetable pieces would fly off all over the frying pan when you flip it over. Just gather them back to the pancake.
  7. Meanwhile, cook Yakisoba Noodles in another frying pan, with a small amount of Oil. Season with Salt & Pepper, OR/AND Okonomiyaki Sauce. Carefully transfer the whole pancake, as Pork slices are facing down, onto the Noodles.
  8. Crack an Egg onto the emptied frying pan and spread it out into the same size as the crepe. Carefully transfer the whole pancake with the Noodles onto the Egg. Cook for another 1 minute until the Egg is cooked.
  9. Flip over the completed Okonomiyaki, and transfer to the serving plate.
  10. Spread a generous amount of Okonomiyaki Sauce on the top, sprinkle with Aonori (*optional) and finely chopped Spring Onion, and enjoy with Pickled Ginger (*optional). Hiroshima-Style Okonomiyaki is traditionally served WITHOUT mayonnaise.

Hiroshima Style Okonomiyaki (お好み焼き広島風) This Hiroshima style okonomiyaki is my favorite. I like this more than Osaka the other most popular okonomiyaki. In Japan, there's a rivalry between Hiroshima and Osaka, on who has better okonomiyaki. Similar to the rivalry of New York pizza versus Chicago style pizza. The Hot plate is particularly useful for making Hiroshima style Okonomiyaki.
