Instructions to make Punjabi chole bhature:
  1. Soak chana overnight. Boil it into 3/4 cups of water with black cardmom or some salt.
  2. Heat oil in pressure cooker, Add cumin seeds, bay leaf, green cardmom.
  3. Saute till it crackles.
  4. Add chopped onion cook until brown.
  5. Add ginger garlic paste and fry for a minute.
  6. Add mashed tomato and cook for 2 minutes.
  7. Now add chole masala,red chilli powder, mango powder, jeera powder stir it well.
  8. Add salt to taste.
  9. Cover and cook in low medium flame for 7 to 8 minutes.
  10. Now oil seprates out from the gravy.
  11. Add soaked chana into masala mix it well.
  12. Add two cup of water and pressure cooker for 7 to 8 whistle.
  13. Spicy and thick punjabi chole masala is ready.
  14. For make Bhatura
  15. Take maida in big bowl.
  16. Add sujji into it.
  17. Add baking powder, sugar and salt combine well.
  18. Add yogurt and mix well.
  19. Knead to smooth daugh.
  20. Cover it with samp cloth allow to rest for 3/4 hour.
  21. After this make dough in equal balls.
  22. Roll it big size poori.
  23. Heat oil in kadhai.
  24. Drop poori into hot oil.
  25. Wait till it puffs up and flip into other side. Deep fry until it turns golden.
  26. Now ready to eat.

My version of chole is however, ready in minutes. I enjoy eating hot chole with tikkis, bhaturas, kulcha or simply topped on a slice of bread.
