Get 500 gm Chicken
Prepare 2 cups Basmati Rice
Prepare 3 cups Water

Make ready 1/2 cup Mint leaves-
Make ready 1/2 cup Coriander leaves

Make ready 1 tbsp Biryani Masala / Garam Masala
Get 1 tsp Turmeric powder
Take 1 tbsp Coriander Powder
Make ready 1 tsp Cumin powder
Get 1/4 Tsp Fennel Powder
Get 1 cup Thick Unsour Curd
Make ready 2 tbsp Cashew
Take 2 tbsp Raisins
Get 3 tbsp Ghee
Make ready 3 tblspn Oil
Make ready 1 tbsp Lemon juice
Prepare 1-2 drops - optional Kewra Essence
Take For Whole Spices
Prepare 1 Bay Leaf
Prepare 5 crushed Cardamom –
Get 1 tsp Cumin Seeds
Take 1 tsp Fennel seeds
Get 1 small stick Cinnamon
Prepare 1 Star Anise
Make ready 5 Cloves
Get 1/2 tsp - adjust Peppercorns
Instructions to make Easy Chicken Biryani:
Wash and Soak the basmati rice for 30 min, drain excess water and set aside.
In a pressure cooker heat oil and ghee, Fry cashews and raisins until golden brown. Drain them and keep it aside.
Add all the whole spices and allow it to splutter
Add in the onion, green chilli and saute over a low heat until onions turn brown
Add in ginger garlic paste and saute for a min.
Add in tomatoes, spice powders, coriander leaves and mint leaves. Mix well.
Add in curd and mix well. Add in the chicken pieces and saute for 10 mins till the chicken is well coated in the masala.
Add in Basmati rice and combine well. Pour 3 cups of water and season with salt and mix well. Add Kewra essence
Now bring this mixture to a boil and reduce the flame, cover the pressure cooker and cook for 1 whistle, simmer and cook for 15 mins. Switch off and let the steam release by itself.
Once cooked, open the pressure cooker and fluff it with a fork. Add lemon juice and mix well
Serve hot with raita
