Litti chokha recipe with step by step photos - a rustic and traditional dish of stuffed whole wheat dough balls, where the stuffing is a spiced mix of roasted gram flour or sattu. this recipe comes from bihar and jharkand region in India. Litti, along with chokha, is a complete meal originated from the Indian state of Bihar. It is also popular in Jharkhand and parts of Eastern Uttar Pradesh.

The ingredients needed to make Litti choka:
Make ready 1 cup whole wheat flour
Take 2 Tbsp ghee
Take 1/2 tsp saltcup
Make ready Cup About 1/3 lukewarm water
Prepare 3/4 cup sattu (flour of roasted chana dal, available in stores)
Take 1/2 tsp salt (as taste)
Get 1/8 tsp hing
Get 1/8 tsp tur meric powder
Take 1/2 tsp red chilli
Prepare 1 tsp mango powder (amchoor)
Prepare 1 tsp grated ginged
Take 1 tsp green chilli
Take 1 tsp ghee/butter
Make ready 1/4 cup water (approximately)
Get 1 cup medium size potato 2 medium size tomato
Take 1 tsp saltSpices we will use half and half to make both chokha
Get 1/4 tsp black pepper1 tsp lemon juice (just for Potato Chokha)
Prepare 2 tsp grated ginger
Make ready 2 Tbsp finely chopped green chillies
Get 2 Tbsp finely chopped cilantro
Make ready 2 Tbsp olive oil or mustard oil (I prefer olive oil)
Take 2 Tbsp ghee or clarified butter for serving the Litties
Litti basically consists of wheat and sattu (powdered gram )formed into balls with spices, and then dipped in ghee (clarified butter). Traditionally litti were roasted over"chulha' but now due to non availability of firewood these are prepared either on gas … Litti Chokha is a traditional dish eaten mainly in Bihar and Jharkhad. It can be had for lunch, dinner or you can make it on your holidays and you will surely love it. Litti is similar to Bati in appearance but there is a little difference.
Steps to make Litti choka:
For Potato Chokha - Add all the remaining spices with mashed potatoes, salt, pinch of black pepper, lemon juice, ginger, cilantro and oil, mix it well. Potato Chokha is ready, set aside.
For Tomato Chokha - To prepare the Tomato Chokha add the spices to mashed tomatoes about 1/2 tsp salt, pinch of black pepper, 1/2 tsp ginger, 1 Tbsp green chilli. 1 Tbsp cilantro and 1 Tbsp of oil mix it together. Tomato Chokha is ready set aside.
To Make Dough - Mix the flour, salt and ghee. Add water slowly to make dough. Dough should be firm but do not knead the dough. Cover the dough and let it sit for at least fifteen minutes.
Filling - Mix all the ingredients together except water, sattu, salt, asafetida, turmeric, red chilli powder, mango powder, ginger, green chilli, and ghee, now add little water to make firm dough, dough will be little crumbly.
Making Litti - Pre-heat the oven at 400 degree Fahrenheit. I am using a toaster oven or you can also use oven.Divide the dough into 8 equal parts and roll them into balls. They will not be very smooth dough ball. Also, divide the filling in 8 parts filling should be little smaller then dough balls.Roll the dough balls into 3-inch circle. Place one part of the filling in the center of each rolled dough, and pull the edges of the dough to wrap the filling. Proceed to make all 8 balls grease with ghe
Baking Arrange the litties over greased baking sheet about one inch apart and place in toaster oven, for 10-12 minutes, turn them over and bake again for 10-12 minutes. Litties should be golden brown all around.
Serving - need about 2 Tbsp ghee or clarified butter for serving the Litties
The Pitthi(stuffing) to be filled in it is made with Sattu and Litti is eaten with brinjal bharta or mashed potato. Litti is a very traditional meal for Bihari cuisine. It is a wholesome meal on its own as sattu is super rich in minerals like calcium, protein and also provides. Litti Chokha is a traditional Bihari and Jharkhand dish that is quite similar to Rajasthani Baati but still very different. The litti is the bread made out of flour and is stuffed with sattu and chokha is the side dish made using eggplant, potato or tomatoes.
