Imarti or Amriti (Bengali: অমৃতি) is a Bengali sweet from India. It is made by deep-frying vigna mungo flour batter in a circular flower shape, then soaking in sugar syrup. Alternative names include Amriti, Emarti, Omritti, Amitti, Jahangir and Jhangiri/Jaangiri.

Imarti is one of the most favored of current trending meals in the world. It’s easy, it is quick, it tastes delicious. It’s appreciated by millions every day. They are fine and they look wonderful. Imarti is something that I’ve loved my whole life.

The ingredients needed to make Imarti:
  1. Take For the Imarti batter
  2. Prepare 1 cup urad dal
  3. Prepare 2 tbsp corn flour
  4. Make ready 1/4 tsp yellow food colour
  5. Take For the sugar syrup
  6. Make ready 3 cups sugar
  7. Take pinch Saffron strands
  8. Get 1/4 tsp cardamom powder
  9. Make ready As needed Ghee for deep frying

To make this simple imarti recipe at home, just grind some green cardamom into a fine powder and keep aside. Imarti and Jalebi are very similar in shape and people often confuse the two. Both are also yellow and orange in color, that's how they have been made traditionally. Even though they look similar, jalebi is made using maida (all purpose flour) while imarti is made with urad dal (split black gram without skin].

Instructions to make Imarti:
  1. For the Imarti batter
  2. Soak the urad dal in enough water for 3 hours.Drain well.
  3. Combine the urad dal, cornflour, yellow food colour and 3/4 cup water in a mixer and blend till smooth.
  4. Fill little Imarti batter into a piping bag with a single nozzle or a thick cloth with a small hole in the centre.
  5. Heat the ghee in broad non-stick pan.pipe out the batter to drop a continuous pattern of a flower having a round centre and 7 round petals into the hot ghee and cook on a slow flame till both sides turn golden brown in colour and crisp.You can deep fry 4 at a time.
  6. Transfer them directly into the prepared warm sugar syrup,press them once lightly and remove and serve immediately.
  7. For the sugar syrup-
  8. Combine the sugar and 1 cup of water in a deep non-stick pan,mix well and cook on a medium flame for 7 minutes, while stirring occasionally.
  9. Switch off the flame,add the saffron strands and cardamom powder and mix well.Keep aside.

Imarti, known in some places as Amriti, is an amazing mithai from Uttar Pradesh. A smooth batter of urad is piped out of a cloth bag to make nice, ring-shaped tubes, which are cooked in ghee till crisp and then dipped in sugar syrup.
