The ingredients needed to make Bharwa Mirchi:
  1. Take 150 gms Bhavnagri Mirchi
  2. Make ready 1/2 cup besan/gram flour
  3. Get 1 tsp Coarsely Grinded Fennel powder
  4. Prepare 1/2 tsp Cumin Seeds
  5. Get 1 tsp Kashmiri Lal Red Chilli powder
  6. Make ready 1 tsp Turmeric powder
  7. Prepare 2 tsp Coriander Powder
  8. Prepare 1 tsp aamchur(dry mango) powder
  9. Prepare 1 tsp Salt
  10. Make ready 1 tbsp Oil (for filling)
  11. Make ready 1 tsp Oil (for roasting gram flour)
  12. Make ready 2 tbsp Oil for frying Mirchi
  13. Get Pinch Asafoetida
  14. Get 1 tbsp Water

We have bharwa Karela, Bharwa Parval, Bharwa Baigan and ofcourse bharwa Mirchi, the list goes on. For making stuffed green chillies we use thick variety of green chilly which is mildly hot. There are several recipes for making Bharwa Mirchi, each recipe will differ in ingredients used for preparing the stuffing. Steps to make Bharwa Mirchi:
  1. Firstly, wash and dry Bhavnagri Mirchi and keep aside
  2. In a pan heat 1 tsp of oil, add cumin seeds, let it crackle and add Asafoetida, fry for a minute and add half cup besan
  3. Keep roasting the besan on low flame till a nice Aroma comes and besan turns light golden brown
  4. Switch off the flame and take out the roasted besan in a plate.
  5. Add in roasted besan, red chili powder, turmeric powder, Coarsely Grinded Fennel powder, coriander powder, Aamchur Powder, salt and 1 tbsp oil. Mix well with the help of your hands. Filling for mirchi is ready.
  6. Now put vertical slits on mirchi and with help of a small spoon take out all the seeds from the mirchi and make it hollow for filling Masala.
  7. Now start filling the masala in all Mirchis. Stuff it properly and keep them ready for shallow frying
  8. Heat around 2 tbsp of oil in a non-stick pan. Start adding all the mirchis one by one in oil. Keep the flame low and cover the Mirchis with a lid. Add some water over the lid so that Mirchis will not burn from below and it will be cooked properly.
  9. Now remove the lid and flip the mirchis so that they can be cooked from other sides. Keep flipping on regular intervals to ensure that Mirchis are cooked from all sides. Now sprinkle leftover roasted gram flour masala over the mirchis and around 1tbsp of water. Cover and cook for 2 mins.
  10. Switch off the flame and Bharwa Mirchi are ready to serve.
