  6. Throw in the spinach, once the pasta is cooked add it to the frying pan stir well and add a little of the pasta water, a drizzle of olive oil and salt and pepper to taste.
  7. Serve with the grated cheese and the crispy pancetta on the top!

Stir well and season with some pepper. I find it does not usually need salt because of the salty pancetta and Parmesan. Cook the pasta according to pack instructions, drain and set aside. Spoon half the pasta into a gratin dish and spoon over half the ricotta mix. Top with the remaining pasta and dollop over spoonfuls of the remaining ricotta.
